Sweet and Healthy Stuffing

Ingredients
  

Recipe for 2 eggplants or 4 portions

  • 1 to 1 ½ Cups Sweet And Healthy Dough Mix
  • 2 Whole Eggplants
  • 1 Zucchini Or Squash- (Or Both) Chopped Into ¼” Cubes
  • 1 Red Or Orange Bell Pepper-Diced
  • 1 Clove Fresh Garlic Smashed And Chopped
  • 1 Cup Mushrooms- Sliced
  • Italian Seasoning Spice Or Your Choice Of Fresh Herbs-Parsley, Basil, Oregano, Thyme To Taste
  • 1 Tablespoon Paprika
  • ½ Cup Of Parmesan
  • Olive Oil – To Sauté Cut Vegetables And Eggplant
  • 1 Large Egg

Instructions
 

  • Preheat oven to 400℉ or Airfryer to 370℉  
  • Cut eggplant in half lengthwise with skin still on. 
  • Brush a light coating of olive oil on both sides of the eggplant halves and put in a baking pan lined with parchment paper in the oven for 30 minutes or airfry for 15-20 minutes or until eggplant begins to soften.       
  • Take out of oven or air fryer and cool for 5 minutes.
  • Scoop eggplant meat out of shell leaving ¼” of eggplant allowing the eggplant to keep its form. 
  • Chop the eggplant meat into ¼” pieces and saute the garlic, eggplant, and bell pepper on medium high heat with olive oil until tender.                 
  • Add mushrooms, zucchini and or squash and seasonings and finish cooking. When almost done, add Sweet And Healthy Dough Mix and Parmesan. 
  • Mix well until dough mix and Parmesan are fully blended. 
  • Generously stuff eggplants with stuffing mix.   
  • Brush the eggplant skins with a light coating of olive oil.     
  • Place the stuffed eggplants on a parchment lined baking sheet or an oiled air fry tray.   
  • Bake for 30-40 minutes in the oven or 10 minutes at 325℉ in the airfryer or until the stuffed eggplants begin to brown.
  • Add a sprinkle of Parmesan cheese on top and bake until cheese melts.

For a non vegetable dish add your favorite meat,  or  seafood  and bake till done!
