Sweet and Healthy Peanut Butter Chocolate Chip

Ingredients
  

Dry Ingredients:

  • 1 ½ Cups Sweet and Healthy Decadent Dough Mix
  • ¾ Teaspoon Baking Powder
  • ½ Teaspoon Baking Soda
  • ¾ Teaspoon Fine Sea Salt
  • 1 Teaspoon Cinnamon
  • 1 Cup Of Date, Coconut or Maple Sugar or Natural Sweetener from SweetAndHealthyBlends.com
  • 1 Cup Dark Chocolate Or Carob Chips 

Wet Ingredients:

  • 1 Large Egg
  • ½ Cup Melted Coconut Oil or Softened Butter
  • 2 Teaspoons Apple Cider Vinegar
  • 1 Tablespoon Vanilla Extract
  • 2 Tablespoons Vanilla Almond Milk, Buttermilk or Whole Milk
  • 1 Cup Peanut Butter

Instructions
 

  • In food processor, blend dry ingredients in the food processor, except the chocolate chips. Separately blend the wet ingredients. Add wet ingredients to the food processor and pulse the mixture. 
  • Fold in 1 cup of chocolate or carob chips, saving a handful for the topping.
  • Cover and refrigerate for 30 minutes. After 10 minutes preheat oven to 340℉
  • Remove the dough from the refrigerator, form it into desired cookie size and place on parchment paper or greased cookie sheet. Flatten slightly.
  •  Press a few additional chips onto each cookie.
  • Bake at 340℉  for 9-11 minutes or until golden.         
  • Cool for 5-10 minutes then transfer to wire cooling rack.

Air Fryer

  • Air Fry at 320℉ for 5 minutes or until golden.
  • Cool for 5-10 minutes then transfer to wire cooling rack.

Notes

MAXIMUM FRESHNESS This is an all natural, no preservatives product. Please store in refrigerator or freeze.
For low sugar cookies… Use low sugar or sugar free carob chips. Also, see Sweet and Healthy's Natural Sweetener list for sweet alternatives.
For low fat and low calorie cookies… Use half recommended amount of oil or butter. Option to substitute apple sauce for other half.
For vegan cookies… Substitute appropriate amounts applesauce, flax seed, or mashed banana for eggs

BARS – Simply pour dough into a silicone bar form and add a few chocolate or carob chips, on top. Drizzle with the melted dark chocolate. Bake at the above directions until done. Enjoy your energy/fiber/protein boost with a professional baked taste!
PEANUT BUTTER – For less fat and calories consider peanut butter powder. Use manufacturers instructions as you will need additional liquid (water) when using powdered peanut butter.
