Sweet and Healthy Chocolate Covered Coconut Macaroon


Dry Ingredients

  • ¾ Bag Sweet and Healthy Decadent Dough Mix
  • 1 14 oz Bag Sweetened Coconut Flakes (Unsweetened Works)
  • ½ Teaspoon Baking Powder
  • ¼ Teaspoon Baking Soda
  • ½ Cup Date, Coconut or Maple Sugar or Natural Sweetener from SweetAndHealthyBlends.com
  • ½ Cup Dark Chocolate Or Carob Chips
  • ¼ Teaspoon Fine Sea Salt
  • OPTIONAL- 1 Bag Of Dark Melting Chocolate
  • ¼ Teaspoon Cinnamon

Wet Ingredients

  • 1 Large Egg
  • 1 Tablespoon Almond Milk , Buttermilk or Whole Milk
  • 1 Teaspoon Apple Cider Vinegar
  • ½ Tablespoon Vanilla Extract
  • ¼ Cup Melted Coconut Oil or Softened Butter


  • Mix dry ingredients in a food processor, only adding ½ cup of coconut flakes. (Put the remainder of the coconut flakes in a mixing bowl.)   
  • Mix wet ingredients separately.
  • In a food processor, mix wet and dry ingredients together and refrigerate for 30 minutes. After about 20 minutes, preheat oven to 340ºF.
  • Form mix into ¾”  diameter compressed balls.  
  • Add 2 beaten egg whites into the mixing bowl with the remaining coconut flakes and stir.    
  • Take the formed balls and one at a time press the coconut-egg white mixture firmly onto the outside of the dough ball forming a macaroon. Place each macaroon onto a parchment-lined or greased cookie sheet.                        
  • Bake at 340ºF for 18-20 minutes, and until coconut begins to brown.        
  • Cool for 5-10 minutes and then transfer to cooling rack.

Air Fryer

  • Air Fry at 325ºF untill macaroon begins to brown.
  • Cool in baking tray for 5-10 minutes and then carefully place on wire cooling rack.

For Chocolate Dipped Macaroons:

  • After Macaroons have cooled. Melt baking dark chocolate on low heat with a teaspoon of oil.Dip half the macroon or drizzle the macaroons with the melted chocolate and let cool. Place in freezer for the dark chocolate to harden for 10-15 minutes.

For low fat and low calorie cookies… Use half recommended amount of oil or butter. Option to substitute apple sauce for other half.
For vegan cookies… Substitute appropriate amounts applesauce, flax seed, or mashed banana for eggs

BARS – Simply pour dough into a silicone bar form and add a few chocolate or carob chips, on top. Drizzle with the melted dark chocolate. Bake at the above directions until done. Enjoy your energy/fiber/protein boost with a professional baked taste!
