Sweet and Healthy Carob Chip Cookies

Dry Ingredients
1 Bag Sweet and Healthy Decadent Dough Mix

1 Teaspoon Baking Powder

½ Teaspoon Baking Soda

¾ Teaspoon Sea Salt

1 Teaspoon Cinnamon

1 ½ Cup Sweetened Carob Chips or Unsweetened Carob Chips

¼ Cup Sweetened Carob Powder

Wet Ingredients
½ Cup Melted Butter or Coconut Oil (Melted)

2 Eggs

1 Tablespoon Vanilla Extract

1 Tablespoon Apple Cider Vinegar

¼ Cup Buttermilk or Vanilla Almond Milk

¾ Cup date, coconut, or maple sugar or see Natural Sweetener from SweetAndHealthyBlends.com

OPTIONAL:

  • 1-2 tablespoons of mocha cold brew coffee concentrate (for an energy boost!)
  • ¼ Teaspoon Pure Mint Extract

Directions
In a food processor, mix wet and dry ingredients, EXCEPT 1 cup carob chips.

Fold in 1 cup carob chips.

Cover and refrigerate for 30 minutes.

Form into desired cookie size and place on parchment lined or greased cookie sheet.

Press remaining carob chips onto top of cookie.

Bake at 340ºF for 8-9 minutes until golden.

Cool for 5-10 minutes then transfer to wire cooling rack.

Air Fryer

Bake at 325ºF for 5 minutes.
