Sweet and Healthy Blueberry Muffin


Dry Ingredients

  • 2 Cups Sweet and Healthy Decadent Dough Mix
  • 1 Teaspoon Cinnamon
  • ¾ Teaspoon Baking Powder
  • ½ Teaspoon Baking Soda
  • ¾ Teaspoon Fine Sea Salt
  • 1 Cup Of Date, Coconut or Maple Sugar or Natural Sweetener from SweetAndHealthyBlends.com

Wet Ingredients

  • 2 Large Eggs
  • ½ Cup Softened Butter or Melted Coconut Oil
  • 2 Cups Buttermilk, Vanilla Almond Milk Or Whole Milk
  • 1 Tablespoon Apple Cider Vinegar
  • 1 Tablespoon Vanilla Extract
  • 2 Cups Washed and Dried Blueberries
  • 1 ½ Teaspoons Lemon Zest (optional)


  • In a food processor, pulse dry  ingredients EXCEPT for the blueberries.
  • Separately combine wet ingredients and pour into food processor and pulse.
  • Fold in 1 ½ Cups Blueberries.
  • Cover and refrigerate for 30 minutes. After 10 minutes, preheat oven to 425℉
  • Fill each muffin cup ¾ full. 
  • Top each muffin with several blueberries.
  • Bake at 425 F for 5 minutes. Then turn oven down to 350 F for 18-22 minutes or until done.  
  • Cool in pan for 5-10 minutes and transfer to wire rack.

Air Fryer

  • Air Fry at 325℉ for 9-12 minutes or until done.
  • Cool on Air Fry tray for 5 minutes then transfer to wire rack.
